Brian,
I have spent some time on this and have not nailed it. But here are some I could recommend you look at.
1) If you are a very good and patient solderer and want the best weatherproof connector money can buy, look at these Hirose Connectors: https://media.digikey.com/pdf/Data%20Sheets/Hirose%20PDFs/HR30.pdf <https://media.digikey.com/pdf/Data%20Sheets/Hirose%20PDFs/HR30.pdf>
2) You could also have a waterproof junction box where you make a break connections with normal connectors and use these cable glands that work well with Cat5 Cable: https://www.digikey.com/product-detail/en/bud-industries/NG-9511/377-1630-ND/439539 <https://www.digikey.com/product-detail/en/bud-industries/NG-9511/377-1630-ND/439539> or use Sugru - https://www.amazon.com/Sugru-Moldable-Glue-Classic-Multi-Color/dp/B008URBC9I/ref=sr_1_1?ie=UTF8&qid=1480455935&sr=8-1&keywords=sugru
3) You can avoid the difficult soldering by buying these pre-made connector kits: https://www.adafruit.com/products/744 <https://www.adafruit.com/products/744>
4) Or you can use this to make a waterproof CAT5 connection: https://www.adafruit.com/products/827 <https://www.adafruit.com/products/827>
5) If you are cheap you can use these automotive connectors (also come uncrimped): https://www.amazon.com/gp/product/B00VZOHVSE/ref=s9_acsd_hps_bw_c_x_4_w
Where you need to solder wire joints, put some heat shrink tubing over the joint and then slather it with this: http://www.homedepot.com/p/Gardner-Bender-4-fl-oz-Liquid-Electrical-Tape-Black-LTB-400/100119178 <http://www.homedepot.com/p/Gardner-Bender-4-fl-oz-Liquid-Electrical-Tape-Black-LTB-400/100119178>
Hope this helps!

I will use some Cat5e or Cat6 ethernet cable that I have plenty of to connect to the Adafruit cables. So I need a male & female combo package that will be water-tight. Wire won't be submerged just in the elements.
